Hideaki Taneda is the chef and namesake behind Taneda in Seattle's Capitol Hill neighborhood. Drawing on experience in both Tokyo and Seattle, he serves omakase courses blending traditional Edomae-style sushi and kaiseki cuisine with Pacific Northwest ingredients and flavors.
