Takeshi Shimbashi serves as Executive Chef of Sushi Ginza Onodera Hawaii, the group's first US-based restaurant, open since 2013. Trained in the traditions of the Tokyo Ginza flagship, he specializes in Edomae sushi techniques including salt-curing, red vinegar marination, and flash blanching.
