Fabio Trabocchi, a Le Marche native and James Beard Award winner, founded Fiola in 2011 after earning Michelin stars in New York. A protégé of legendary Gualtiero Marchesi, he built his reputation across two continents. Fiola's kitchen is led day-to-day by Executive Chef Antonio Mermolia.
