Al Biernat began his hospitality career at Aspen's Paragon nightclub before working his way up from busboy to manager at The Palm in Hollywood. He went on to open Palm locations in Houston and Dallas, then founded Al Biernat's on Oak Lawn Avenue in Dallas in 1998.
